Savor the Summit 2016

There's just some magic in Park City's Historic Main Street. The colorful buildings are home to a variety of shops and restaurants, providing a lively atmosphere of shoppers and diners regardless of the season. The heart of this mountain town makes the perfect setting for Savor the Summit.

More than 20 restaurants developed custom dining areas down Main Street for an outdoor dinner party featuring delicious food food and drink and live music. Cuisine Unlimited joined in on the fun again this year, hosting 80 guests for our Cuban-themed, formal dinner. Chefs prepared each of the five courses in a temporary kitchen set up along Swede Alley.

Tropical florals and cigar boxes adorned the colorful wood-slatted tables to set the Havana atmosphere as guests arrived. They were treated to a selection of hors d'oeuvres and drinks, including two signature mojitos, as they enjoyed lively conversation and music from a Cuban drum band.

Dinner service began with pork belly over creamed corn followed by lobster ceviche in a watermelon cup. The salad featured fresh watercress topped with avocado, grilled pineapple, and mango lime vinaigrette.

Guests chose from three different entree choices. Seared snapper was served atop white rice with mojo sauce and sautéed greens. A grilled pork tenderloin was topped with habanero mojo sauce and served with sides of smashed yucca and baby vegetables. The vegan option included a black bean and corn sope atop smashed yucca served with baby vegetables. Guests were able to satisfy their sugar cravings with rum ice cream alongside chocolate cigars and carbonated candy ashes.

Overall, Savor the Summit proved to be a fun and fabulous evening for all in attendance. This "pop-up" style dinner may only come once a year, but it always proves to be one of our favorite events. We are already looking forward to Savor the Summit in 2017!
