Cuisine Unlimited Catering & Special Events has been selected to provide exclusive food and beverage services for the George S. and Dolores Doré Eccles Theater, a state-of-the-art performing arts center in the heart of downtown Salt Lake City. Operations will include innovative theater concessions, suite and lounge dining, and special event catering. Stacey Rosati will serve as Executive Chef at Eccles Theater. Stacey graduated magna cum laude from Johnson & Wales University and has years of culinary experience in various roles, including owner of her own café in Driggs, Idaho. She will oversee food services for private event catering, performance concessions, and the Encore Bistro. This includes management of three separate kitchens and a full staff of culinary professionals.
Vicki Dunnington has been named Executive Director of the Cuisine Unlimited operation at Eccles Theater. Vicki brings a wealth of experience, having owned her own catering company in Massachusetts for ten years. She will oversee all aspects of the operation, including management of multiple venue sites within the theater, sales, marketing, event production, personnel, and performance concessions, as well as the Encore Bistro.
Scheduled to open in Fall 2016, the theater will have spaces to host first-run touring Broadway shows and other nationally-recognized music, comedy, and family entertainment acts, as well as a variety of local performances. Numerous venue spaces within the theater will be available for private events, giving Salt Lake City an outstanding new location to serve the community.
