About Encore Bistro

In its beginnings, Cuisine Unlimited operated four cafés around Salt Lake City in addition to catering services. Since its growth and expansion over the past 15 years, the company has shifted its focus to providing premier catering and special events to the Utah community and beyond. The exclusive contract for all food and beverage at the George S. and Dolores Doré Eccles Theater has allowed Cuisine Unlimited to once again open a retail restaurant to the public in Salt Lake City.

Encore Bistro at Eccles Theater is intended to enhance the overall experience of patrons visiting the new theater. The menu features a variety of sandwiches and salads made with fresh ingredients, with titles inspired by traditional theater terms and familiar local names. Menu items are perfect for a sit-down meal while visiting downtown, while to-go options are also available to satisfy the busy lifestyles of workers heading to the office.


Executive Chef Stacey Rosati

About the Chef

Executive Chef Stacey Rosati comes with a great deal of culinary experience. She graduated magna cum laude from Johnson & Wales University, and completed a postgraduate apprenticeship in Baldissero, Italy. Stacey once served as executive chef for Cuisine Unlimited, and has fulfilled many other culinary roles, including owning her own café in Driggs, Idaho.

Stacey's return to Salt Lake City brought on the exciting endeavor of Eccles Theater, including Encore Bistro. With her extensive food knowledge and kitchen skills, Stacey is committed to creating delicious menus using fresh ingredients for those working in and visiting downtown.
