Event Recap | Critics Luncheon

Cuisine Unlimited recently collaborated with Michelle Leo Events to organize an exquisite lunch to get feedback from some of our toughest critics: our clients. We invited a group of Salt Lake City's top business and event professionals to our 2017 Critics Luncheon. The Grand Lobby of the Eccles Theater provided a beautiful backdrop to show off an innovative menu developed by our very own Chef Stacey Rosati, as well as beautiful table design by Michelle Leo Cousins and her talented team. 

Guests were greeted with a variety of butler-passed hors d'oeuvres, including a Roasted Cauliflower & Celeriac Soup Sip, Fig Thumbprint Biscuit with Bleu Cheese and Roasted Walnuts, Asparagus & Three Cheese Tartlet, and a Five Spice Tofu with Carrot Puree, Radish & Pickled Ginger. As guests were seated, they were served a delicious Roasted Heirloom Carrot Salad with Baby Greens finished with Champagne Vinaigrette and a Carrot-Top Pesto.

A trio of entrees was offered to satisfy the discerning palates of our guests. Maple-Glazed Chicken was served with a Mustard Jus over Braised Kale & Fregola Sarda with Roasted Butternut Squash. Coffee-Rubbed Strip Steak rested atop Wild Mushroom Fricassee with a Shallot Thyme Demi-Glace. Finally, Pan-Seared Mahi Mahi was accompanied by a Preserved Lemon-Tomato Chutney & Thai Basil-Shiitake Orzo.

Of course, any good meal must be capped off with decadent dessert. The crowd favorite was a Greek Yogurt Cheesecake sprinkled with Pomegranate Seeds. Guests also enjoyed a Chocolate Flourless Torte with Raspberry Chantilly Cream and a Persimmon Pistachio Cake with Cardamom Cream Cheese Icing & Crystallized Violets.

 
 
 

The design by Michelle Leo featured elegant blush details with pops of burgundy, all tied together with notes of gold and copper. The breathtaking florals by Native Flower Company included variations on those colors in the table centerpieces as well as individual stems attached to each chair.
